Festive Beef Stuffed Artichoke
A festive holiday dish of beef-stuffed artichoke bottoms served in a rich sauce, perfect over rice or couscous.

Instructions
- 1.Place the vegetables for the beef mixture in a small food processor and process until finely chopped.
- 2.Place the tomato sauce ingredients in a mixing bowl and whisk until well combined.
- 3.In a large bowl, combine the ground beef, processed vegetable mixture, and all of the beef seasonings. Mix well until everything is evenly combined.
- 4.In a 12 inch pan, add the sliced onion, salt, black pepper, and olive oil. Mix, then spread the onions evenly.
- 5.Fill each artichoke bottom with a heaping tablespoon of the beef mixture, gently shaping the filling into a small mound. You should have about 15 stuffed artichokes.
- 6.Arrange the stuffed artichokes snugly on top of the onions, meat side up.
- 7.Cook over medium-high heat for 5-7 minutes.
- 8.Spoon the tomato sauce evenly over each stuffed artichoke and sprinkle with the chopped cilantro or parsley.
- 9.Cover with a lid and reduce the heat to low. Cook for 45-50 minutes, until the beef is fully cooked and the artichokes are tender.

- •15-16 frozen artichoke bottoms, defrosted on the counter for 10 minutes

- •1 sweet onion, thinly sliced
- •1/2 teaspoon salt

- •2 small gold potatoes, cut into quarters
- •3 garlic cloves
- •A handful of fresh cilantro
- Seasoning for the beef
- •1 heaping teaspoon salt
- •1/2 teaspoon ground black pepper
- •1 heaping teaspoon paprika
- •1 heaping teaspoon ras el hanout
- •2 tablespoons olive oil

- •1 tablespoon silan, date syrup
- •2 garlic cloves, minced
