Rosh Hashanah Simanim Salad

A colorful Rosh Hashanah salad with Israeli couscous, apples, dates, herbs, pomegranate seeds, and a bright honey dressing.

Rosh Hashanah Simanim Salad

Ingredients

  • 1 package (250 g) of Israeli pearl couscous, cooked and cooled to room temperature
  • 2 green apples, finely chopped
  • 5 Persian cucumbers, finely chopped
  • 4 dates, pitted and chopped
  • 1 jalapeno pepper, finely chopped (optional)
  • 1 small red onion, finely chopped
  • 1 bunch of finely chopped mint leaves
  • 1 bunch of finely chopped parsley
  • 1 cup of pomegranate seeds
  • Dressing ingredients
  • 1/4 cup of extra virgin olive oil
  • Juice from 2 small lemons
  • 2 tablespoons of pomegranate molasses
  • 1 teaspoon of honey
  • 1 tablespoon of Dijon mustard
  • 2 minced garlic cloves
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of sumac
  • Topping
  • Handful of pomegranate seeds and chopped parsley

Instructions

  1. 1.Add all the salad ingredients to a salad bowl.
  2. 2.Pour the dressing on top and mix well.
  3. 3.Garnish with pomegranate seeds and chopped parsley.
  4. 4.Store it in the refrigerator for up to 3-4 days.
